This wine is produced with the Sauvignon Blanc grape variety is harvested from vines with a controlled yield of 5 tons per hectare.
The ripening control of the grapes was carried out to define the ideal state of ripeness. After hand-harvesting, the grapes were carefully de-stemmed, crushed, and pressed. They underwent cold static decanting at 10°C for 36 hours before a two-week fermentation at a controlled temperature of 12-14ºC. Near the end of fermentation, the wine was transferred to French and American oak barrels, where it aged on fine lees for six months.
TASTING NOTES
This Sauvignon Blanc displays a bright citrus color, with complex aromas of spices, dried fruit, and subtle oak. On the palate, its crisp acidity and long, dry finish are enhanced by a hint of bitterness, making it an excellent wine for food pairing.
